Nathan relocating to<br \/>\nVirginia in the Spring of 2017 to serve as the President at Ovoka Estate and has been<br \/>\nassisting with and teaching in various charcuterie- and butchery-focused workshops<br \/>\naround the United States. Lately, Nathan has been in the Mexico City, the Baltics, and<br \/>\nIceland researching preservation and smoking techniques for meats and fish.
